It is time to review another awesome cookbook from Gooseberry Patch!  This time, we got a look at 101 Breakfast and Brunch Recipes.  This book is packed full of recipes that are perfect to take to brunch, serve on any old day or make for a special occasion.

Fall is just around the corner (even though it is still humid and hot down here in the South) and I was in the mood for something that reminded me of my favorite season.  The Pumpkin Streusel Coffee Cake fit the bill!

  1. 18-1/2 oz. pkg yellow cake mix
  2. 1 cup of pumpkin
  3. 3 eggs, beaten
  4. 3 T. oil
  5. 1/3 cup water
  6. 1 t. pumpkin pie spice
  7. 1 1/3 cup brown sugar, packed and divided
  8. 2 t. cinnamon, divided
  9. 1 cup all-purpose flour
  10. 1/2 cup butter, softened
  1. Combine dry cake mix, pumpkin, eggs, oil water and pumpkin pie spice.
  2. Pour half of the batter into a greased 13x9 baking pan.
  3. Mix together 1/3 cup brown sugar and 3/4 teaspoon cinnamon and sprinkle over the batter in the pan.
  4. Spread the remaining batter in the pan.
  5. Combine flour and butter with remaining brown sugar and cinnamon.
  6. Spread the mixture on top of the batter.
  7. Bake at 325 degrees for about 35 minutes of until baked through.

If you follow the directions properly, your cake will not look like mine.  I completely missed the step of adding the flour so my streusel topping kind of sunk to the middle of the cake while it baked.

The cake was delicious though and I would definitely make it again as we continue to travel towards the season of fall.

    pumpkin, cinnamon and vanilla- following my nose to the kitchen this morning! mmmmmm….ahhhh…..coffee too…. My favorite breakfast is cinnamon oatmeal with butter and toast with honey!

    love coffee cake but need new twist. think i’ve just found it. also love oatmeal with raisins and brown sugar or cream of wheat. family doesnt care for pumpkin pie but think they just might try this. have many of your books and love to try new things. thanks for this new idea

    Weekend breakfasts are my fav as there is usually time to make something without all the rush to get out the door. Love french toast from thick slices of bread with cinnamon and vanilla hot off the griddle (or make ahead and soak overnight then bake off in oven). Family also loves breakfast burritos-tortillas, scrambled eggs, cheddar, crisy bacon, refried beans and hashbrowns or potatoes o’brien, seasoned to taste. We top ours off with fresh homemade salsa.

    I love to add a little bit of uncooked oatmeal to my pancake batter then adding butterscotch chips while I’m cooking them. Very yummy and a little extra fiber!

    Gotta try this wonderful sounding coffee cake. I like my morning routine…Cream of wheat, eggs, maple flavored sausage. Too good to be true!

    We love oatmeal/fruit mixtures in a cup for just the two of us but when we have company, we love casseroles that just “wow” our guests. Can’t wait to try this one. OH…during the holidays – it’s my homemade cinnamon rolls that have been a traditions for 30 years!

    French toast is my all time favorite…made with extra eggs. My husband’s homemade hash browns run a close second!
