Shrimp and Orzo Salad and a Gooseberry Patch Giveaway

It is time to review another Gooseberry Patch book, courtesy of Goosberry Patch.  Read all the way through the post to learn how you can enter to try to win a copy of the book reviewed here!


The 101 Stovetop Suppers book is full of recipes that are quick and easy to whip up on the stove.  They are perfect for the days that you don’t want to turn on your oven.

The first recipe to catch my eye in the book is about the easiest meal you can make and it is perfect to take to a summer potluck.  This cool pasta salad will wow everyone at the party!

Note:  You will probably want to double the recipe if you are going to bring it to a large event.


Shrimp and Orzo Salad

1 and 1/2 cup of orzo pasta, uncooked

1 cup asparagus, trimmed and cut into bite sized pieces

3 green onions thinly sliced

1/2 cup of fresh parsley chopped

Italian dressing to taste

1 cup cooked medium shrimp (I used about 1.5 cups)

Cook the orzo according to package and drain and rinse.  Place asparagus in a large saucepan of simmering water for three to four minutes.  Drain and rinse.  Cook shrimp according to directions.

In a serving bowl, mix all ingredients.

*Changes I made:  I left off the parsley because I don’t like it.  I also left off the asparagus because it rang up at 6 dollars for a bunch and I wasn’t paying that much at the store that I was at.

This salad was awesome but I thought it lacked flavor.  I would add salt and maybe a salad seasoning to it next time.
