In a nutshell, I would say this month is wrapping up pretty well. My husband and I are appreciating our meals at home and all our time together as a family. I have really been able to focus and prioritize the things that are important to me when it comes to my spending (the list of things to purchase in August isn’t so long anymore). The kids finally understand a little better what it means to live without some of life’s extravagances…like dessert out.
Okay, so this recipe I am about to hit you with isn’t exactly one my kids would choose to go out and buy, but my husband and I sure would! A little over a month ago the hubby sent me an email with a link to the recipe for these Paleo Chocolate Drizzled Coconut Macaroons from Zenbelly. I have not had time to look around the blog any further, but I did finally get around to making the macaroons this afternoon and we are both happy with the result.
Since Threaded Together is not dedicated to Paleo foods (I’m sure several of you are even asking, “what the heck is Paleo?”), I would like to put in a disclaimer…If you are not a person who is on some sort of limited diet like Paleo, Gluten Free, SCD, or something of that nature, you are probably not going to enjoy these quite like we did, so I would probably not bother making them. These are not your extra sugary, sweetened condensed milk, macaroons, as I have previously made on this website. My how my life has changed! They are plain, and simple, and sweetened with a little honey. It is just enough to fulfill that desire for a sweet confection when you don’t splurge on dessert often. That means for us, they were a great way to start our weekend! (I have already eaten too many of them to admit)
